Baba Suisan
Baba Suisan Ltd (馬場水産) is situated in Isso in the very north of Yakushima. The fish processing plant was established in 1907 and is still run by the same family. Baba Suisan specialize in smoked mackerel using traditional methods with hardwood. Another speciality is `saba bushi` where the mackerel are coated with a natural mould to give it the distinctive flavour.
